This Week at the Davidson Farmers Market: Sept. 5

by | Sep 3, 2020 | Davidson Farmers Market, Local, News, Nonprofits

Davidson Farmers’ Market is open – with a variety of COVID-19 restrictions in place.

Hello DFM Shoppers,

Happy Labor Day Weekend! It’s hard to believe that it’s already September and that the Market has been back for two solid months. We opened in July with our vendors pouring their hearts and souls into bringing their goods to Market after being forced to find alternative ways to sell their products because the Market was unable to open for months due to the pandemic. Now, it’s exhilarating to see the 1,000 plus shoppers that come out every Saturday to support our Davidson Farmers Market vendors – and the joy it brings to our hardworking farmers, producers, and volunteers.

Although it’s still hot and humid outside, we are indeed heading into fall. On Saturday you’ll see some new produce on the tables, like spaghetti squash, acorn squash, butternut squash, and maybe the first radishes of the fall. In the coming weeks more new items will be at the Market including eating pumpkins, Swiss chard, kale, collards, and broccoli. It’s an exciting time of the year to eat as late summer foods join early fall foods, bringing the best of the best to our tables. Take this Labor Day Weekend opportunity to fire-up the grill and enjoy all of the farm food goodness that you can get right in town at the Davidson Farmers Market.

Check out a few other new items at the Market on Saturday:
Butter Crust: Pumpkin Bear Claw Danish, Pistachio Chocolate Danish, Pesto Croissant & Crème Bun Danish
Mood Indigo: End of Summer Scrub Special
Lavender Garden: Lavender Candles & Lavender Hand Sanitizer

We look forward to seeing all of your masked faces on Saturday morning for another beautiful Market day!
Courtney

Recipe Box: Baked Spaghetti Squash

Take advantage of the last bits of summer and early signs of fall with this baked spaghetti squash with cherry tomatoes and parmesan cheese.

Baked Spaghetti Squash w/ Tomatoes & Parmesan Cheese

Serves 4

Ingredients

1 whole spaghetti squash*

3 Tablespoons olive oil, divided***

1/2 onion, diced****

3 cloves garlic, finely minced**

1 cup cherry tomatoes, halved

3/4 cup  Parmigiana Reggiano, coarsely grated

1/2 cup fresh basil leaves, chopped**

1 teaspoon kosher sale, more to taste

Fresh cracked black pepper, to taste

Directions

Preheat oven to 375°F. Oil a sheet pan with 1 tablespoon of olive oil.

Carefully cut spaghetti squash in half lengthwise. Scoop out the seeds and connecting strands, then place cut side down on the prepared sheet pan.

Bake for 45 minutes, or until the squash flesh becomes tender and separates easily into strands with a fork. Finish by gently loosening and removing the “spaghetti strands” from the shells. Set aside.

Heat a large saute pan over medium heat. Add remaining 2 tablespoons of olive oil and then add onion and garlic. Cook until soft, stirring every 30 seconds, then add tomatoes. Cook tomatoes until tender, about 2-3 minutes.

Add spaghetti squash strands and salt to the tomato mixture and continue cooking until the spaghetti squash is heated through (usually less than a minute.) Remove pan from heat. Gently fold in Parmigiana Reggiano cheese and fresh basil. Season with additional sea salt and fresh cracked pepper to taste (optional). Serve immediately.
